Creamy, cheesy garlic parmesan broccoli with turkey bacon and mushrooms – a perfect low-carb side dish or main course that’s both indulgent and nutritious.

 

Ingredients

  • 5 ounces turkey bacon, cut into strips
  • 2 tablespoons unsalted butter
  • 8 ounces mushrooms, sliced
  • 2 pounds broccoli florets
  • 1/2 teaspoon salt
  • Black pepper, to taste
  • 1 teaspoon paprika
  • 5 garlic cloves, minced
  • 3/4 cup heavy whipping cream
  • 2 tablespoons cream cheese
  • 1/4 cup vegetable or chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • Chopped fresh parsley for serving

Instructions

  1. Preheat oven to 375°F. In a large oven-safe skillet, cook turkey bacon until crisp. Remove bacon, keeping 1 tablespoon fat in the skillet.
  2. Add 1 tablespoon butter and mushrooms to skillet. Cook 5-7 minutes until browned. Season with salt and pepper, then set aside.
  3. Add remaining butter and broccoli to skillet. Season with salt and pepper and cook 6 minutes.
  4. Add garlic and cook 1 minute. Reduce heat to low, then add cream, cream cheese, stock, half the cheeses, and paprika. Simmer 3-4 minutes until sauce is smooth.
  5. Return mushrooms and bacon to skillet, stirring to coat. Top with remaining cheeses.
  6. Bake for 15 minutes until bubbling and golden. Optionally broil 1-2 minutes for deeper browning.
  7. Let rest 5 minutes before garnishing with parsley and serving.

Notes
