For the Chicken:

  • 1 tbsp avocado oil or olive oil
  • 1 lb boneless, skinless chicken breast butterflied or beaten down to about ½” thickness
  • 1 tbsp italian seasoning
  • ½ tsp paprika
  • salt & pepper to taste

For the Pasta:

  • 1 tbsp avocado oil or olive oil
  • 1 tbsp unsalted butter
  • ½ jumbo yellow onion diced (1 cup)
  • 46 large cloves garlic minced
  • 8 oz dry penne pasta (normal, gluten free or protein pasta)
  • 2 cups chicken broth
  • 1 cup finely grated parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp chopped parsley

Instructions

  1. Season chicken with a mixture of Italian seasoning, paprika, salt, and pepper.
  2. Sear chicken in hot oil for 3-5 minutes per side until 165°F internal temperature. Remove and set aside.
  3. Add more oil and butter to the pan; sauté onion until translucent, then add garlic and cook 1 minute.
  4. Deglaze with chicken broth, scraping up browned bits. Bring to a light boil.
  5. Add dry pasta, ensuring it’s submerged. Cover and cook 10 minutes until al dente.
  6. Turn off heat; stir in parmesan, cream, and parsley until cheese melts and sauce thickens.
  7. Slice cooked chicken, add to pasta, and toss to combine.
