Garlic Parmesan Chicken and Rice

A creamy, flavorful one-pot meal featuring tender chicken and rice in a rich garlic parmesan sauce.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon paprika
  • 1 teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely diced (about 1 cup)
  • 1 tablespoon garlic, minced
  • 1 ½ cups (277.5 g) uncooked long-grain white rice
  • 3 cups (24 ounces / 720 g) chicken broth
  • ½ cup (50 g) parmesan cheese, grated, plus extra for garnish
  • ½ cup (119 g) heavy whipping cream
  • fresh parsley, for garnish

Instructions

  1. Season chicken pieces with paprika, garlic salt, and pepper.
  2. Melt butter in a large pot with tight-fitting lid over medium heat. Add onion and cook until softened (3-4 minutes).
  3. Add seasoned chicken and cook until golden on all sides (about 5 minutes).
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Add rice and chicken broth, stirring well to combine.
  6. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes until rice is tender.
  7. Remove from heat and stir in parmesan cheese and heavy cream until melted and creamy.
  8. Garnish with fresh parsley and additional parmesan cheese before serving.
