  • 16 large mushroom caps, stems removed and leveled
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter, softened
  • 2 garlic cloves, finely minced
  • 2 tablespoons fresh thyme, chopped
  • 1/2 teaspoon garlic powder
  • 1 1/2 tablespoons lemon juice
  • 5 tablespoons fresh breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1 tablespoon olive oil (for onions)
  • 1 medium yellow onion, thinly sliced
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F.
  2. Heat 3 tablespoons olive oil in a skillet over medium-high heat. Sear mushroom caps cap-side down for 2-3 minutes until lightly browned, then transfer to a baking dish hollow-side up.
  3. In another skillet, heat 1 tablespoon olive oil over medium heat. Add sliced onion with a pinch of salt and cook for 12-15 minutes until caramelized.
  4. Mix softened butter, minced garlic, thyme, lemon juice, garlic powder, salt, pepper, Parmesan, and a spoonful of caramelized onions in a bowl until well combined.
  5. Fill each mushroom cap with the garlic-Parmesan mixture, sprinkle with breadcrumbs, and top with remaining caramelized onions.
  6. Bake for 15 minutes until mushrooms are tender and breadcrumbs are golden and crisp.
  7. Let rest briefly before serving.
