Gingerbread Bars with Cream Cheese Frosting

  • 1/2 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • Optional: 2 tbsp crystallized ginger, finely chopped
  • Optional: Holiday sprinkles for decoration

Instructions

  1. Preheat oven to 350°F and line a 9×13 inch pan with parchment paper, leaving overhang on sides.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, baking soda, salt, nutmeg, and cloves.
  3. In a large bowl using an electric mixer, beat softened butter and brown sugar until light and fluffy, 2-3 minutes.
  4. Add molasses, egg, and vanilla extract to butter mixture and mix until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing on low just until combined.
  6. If using, fold in chopped crystallized ginger.
  7. Spread batter evenly into prepared pan, smoothing the top with a spatula.
  8. Bake for 12-15 minutes until edges are set and a toothpick inserted in center comes out with just a few moist crumbs.
  9. Allow to cool completely in the pan on a wire rack, about 1-2 hours.
  10. For frosting, beat softened cream cheese until smooth, then add powdered sugar, lemon juice, and vanilla extract. Beat until completely smooth.
  11. Spread frosting evenly over cooled gingerbread.
  12. Optional: Add holiday sprinkles or decorations.
  13. Refrigerate for 30 minutes before cutting for cleaner cuts.
  14. Cut into 16-20 squares using the parchment overhang to lift from pan.
