Gingerbread Men Sandwich Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

  • For the filling:
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and optional nutmeg and cloves.
  3. Beat butter and brown sugar together until light and creamy, about 2-3 minutes.
  4. Add molasses, egg, and vanilla to butter mixture and beat until thoroughly combined.
  5. Gradually add dry ingredients to wet mixture in three batches, mixing until just incorporated.
  6. Form dough into a ball, divide in half, flatten into disks, wrap in plastic and refrigerate for at least 30 minutes.
  7. Roll chilled dough to 1/4-inch thickness on a lightly floured surface.
  8. Cut out gingerbread men shapes and transfer to prepared baking sheets, spacing 1 inch apart.
  9. Bake for 8-10 minutes until edges are set but centers are still slightly soft.
  10. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  11. For filling, beat cream cheese, melted butter, powdered sugar, and vanilla until smooth and fluffy.
  12. Match cookies into pairs of similar size and shape.
  13. Spread or pipe 1-2 tablespoons of filling onto flat side of one cookie from each pair.
  14. Gently press second cookie, flat side down, onto filling to create sandwich.
  15. Refrigerate for at least 30 minutes before serving to allow filling to set.

  • For crispier cookies, bake 1-2 minutes longer.
  • Dough can be made up to 3 days ahead and refrigerated, or frozen for up to 3 months.
  • Unfilled cookies can be stored in an airtight container for up to 1 week.
