Gluten Free Apple Brie Tart

  • 2 tbsp unsalted butter, melted
  • 2 tbsp sugar
  • 1 large egg, room temperature
  • ½ tsp vanilla extract
  • ¼ tsp fine sea salt
  • 2 medium apples (Honeycrisp, Pink Lady, or Granny Smith), thinly sliced
  • 4 oz brie cheese, sliced (rind removed if desired)
  • 1 tbsp honey
  • ½ tsp ground cinnamon
  • 1 tsp fresh lemon juice
  • ¼ cup chopped walnuts (optional)
  • 1 tsp fresh thyme leaves (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9-inch tart pan with parchment paper.
  2. In a medium bowl, combine almond flour, melted butter, sugar, egg, vanilla, and salt. Mix until a cohesive dough forms.
  3. Press dough evenly into the bottom and about 1 inch up the sides of the tart pan. Prick bottom with a fork.
  4. Par-bake the crust for 10 minutes until just beginning to set.
  5. Meanwhile, toss apple slices with lemon juice to prevent browning.
  6. Arrange apple slices in concentric circles over the par-baked crust, slightly overlapping each slice.
  7. Distribute brie slices evenly between and on top of the apple arrangement.
  8. Mix honey and cinnamon together, then drizzle over the apples and brie.
  9. If using, sprinkle with chopped walnuts and thyme leaves.
  10. Bake for 25-30 minutes until crust is golden brown, apples are tender, and brie is melted.
  11. Allow to cool for at least 15 minutes before removing from the pan and slicing.

Notes

For a firmer crust, refrigerate the assembled tart for 15 minutes before baking.

Mixing different apple varieties creates more complex flavor.

The tart can be stored in the refrigerator for up to 3 days. Reheat slices in a 300°F oven for 5-7 minutes to restore crispness.
