Gluten Free Apple Brie Tarts

  • 1 cup gluten-free all-purpose flour blend
  • 1/4 cup almond flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 1 egg yolk
  • 12 tablespoons ice water (if needed)
  • 2 medium apples, thinly sliced (Honeycrisp or Granny Smith)
  • 4 oz brie cheese, rind removed and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon honey or maple syrup (optional, for drizzling)
  • 2 tablespoons chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the gluten-free flour, almond flour, sugar, and salt.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work quickly to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Make a well in the center and add the egg yolk. Mix gently, adding ice water if needed, until dough just holds together.
  5. Divide the dough evenly among the muffin cups. Using your fingers, press the dough into the bottom and up the sides of each cup, creating a well for the filling.
  6. Chill the formed crusts in the refrigerator for 15-20 minutes.
  7. Meanwhile, toss the sliced apples with lemon juice, cinnamon, brown sugar, vanilla extract, and a pinch of salt in a bowl.
  8. Layer the sliced apples evenly inside each prepared crust, slightly overlapping the slices.
  9. Place slices of brie on top of the apples, ensuring each tart gets an equal amount of cheese.
  10. Bake in the preheated oven for 20-25 minutes, until the crusts are golden brown and the cheese is melted and bubbly.
  11. If desired, drizzle with honey or maple syrup and sprinkle with chopped nuts after baking.
  12. Let cool for 5-10 minutes before serving warm.

Notes

  • For the best texture, ensure your butter is very cold and work quickly when making the crust.
  • If your gluten-free flour blend doesn’t contain xanthan gum, add 1/4 teaspoon to help bind the dough.
  • These tarts can be made a day ahead and gently reheated at 300°F for about 10 minutes before serving.
