  • 8 sheets phyllo pastry, thawed according to package directions
  • 4 oz goat cheese, softened at room temperature
  • 2 tbsp honey, plus more for drizzling if desired
  • 1 tbsp fresh thyme leaves, stripped from stems
  • 2 tbsp high-quality olive oil
  • Pinch of freshly ground black pepper
  • 2 oz cream cheese, softened (optional, for a milder filling)
  • 1 tsp lemon zest (optional, for brightness)
  • 2 tbsp finely chopped walnuts (optional, for crunch)
  • Sea salt flakes for finishing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the softened goat cheese, 1 tablespoon of honey, half of the thyme leaves, and black pepper. Mix until smooth.
  3. Place one sheet of phyllo on a clean, dry surface. Brush lightly with olive oil. Place a second sheet on top and brush again with oil. Continue until you have a stack of four layers. Repeat with remaining sheets.
  4. Cut each phyllo stack into 9 equal squares (cut into thirds in both directions) for a total of 18 squares.
  5. Place a teaspoon of goat cheese mixture in the center of each square.
  6. Gather the corners of each square up around the filling, gently twisting to form a small purse or bundle.
  7. Arrange the parcels on the prepared baking sheet, spacing them about 1 inch apart.
  8. Brush the tops and sides with the remaining olive oil. Sprinkle with the remaining thyme leaves.
  9. Bake in the preheated oven for 12-15 minutes, or until the phyllo is golden brown and crispy.
  10. Remove from oven and immediately drizzle with the remaining tablespoon of honey.
  11. Allow to cool slightly, about 3-5 minutes, before transferring to a serving plate.

Notes

Work quickly with phyllo dough as it dries out rapidly. Keep unused sheets covered with a slightly damp kitchen towel.

For make-ahead preparation, prepare the goat cheese filling up to 3 days in advance, but assemble the bites shortly before baking.

These bites are best enjoyed warm for the optimal contrast between crispy exterior and creamy filling.
