  • 1 tablespoon cooking oil
  • 1 medium onion, diced
  • 1 jalapeño pepper, diced (optional)
  • 1 tablespoon fresh ginger, finely grated or minced
  • 3 cloves garlic, chopped
  • 1 tablespoon ground cumin
  • 3 cups chicken broth or vegetable broth
  • 2 cups salsa verde
  • 1 pound boneless, skinless chicken breasts or thighs
  • Two 15.5-ounce cans white beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 medium zucchini, sliced (optional)
  • 1 cup corn, fresh or frozen (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon fresh cilantro, chopped (optional)

Instructions

  1. Heat oil in a large pot over medium-high heat. Add onion and jalapeño, cooking until softened, about 5 minutes.
  2. Stir in ginger, garlic, and cumin, cooking for 1 minute until fragrant.
  3. Add broth, salsa verde, chicken, beans, and oregano. Bring to a boil, reduce heat and simmer for 20 minutes until chicken is cooked.
  4. Remove chicken, shred it, and return to stew.
  5. Add zucchini and cook for 10 minutes until softened.
  6. Stir in corn and cook for 5 more minutes.
  7. Season with salt and pepper, garnish with cilantro if desired.

Notes
