  • 1/4 teaspoon smoked paprika
  • 3 tablespoons fresh cilantro, chopped
  • 34 green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch casserole dish.
  2. In a skillet, brown the sausage slices until lightly crisp; set aside.
  3. If desired, sauté the diced onion in 1 tablespoon of the sausage drippings until translucent.
  4. In a large bowl, whisk together eggs, milk, 3/4 cup of the cheese, salt, pepper, garlic powder, and cumin.
  5. Layer the potatoes, onion, and sausage in the casserole dish, distributing evenly.
  6. Pour the egg mixture over everything, ensuring it seeps through all layers.
  7. Sprinkle the remaining 1/4 cup cheese on top.
  8. Bake for 35-40 minutes, until the center is set and the top is golden.
  9. Let rest for 5-10 minutes before serving.
  10. Garnish with fresh cilantro and green onions.
