Green White Cookies with Pistachios

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips
  • ¼ teaspoon almond extract (optional)
  • 3.4 oz package pistachio pudding mix (optional, for deeper color and flavor)

Instructions

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar for 3-4 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract (and almond extract if using).
  4. In a separate bowl, whisk together flour, baking soda, and salt (and pistachio pudding mix if using).
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing until just combined.
  6. Fold in chopped pistachios and white chocolate chips until evenly distributed throughout the dough.
  7. For best results, chill the dough for at least 30 minutes (optional but recommended).
  8. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  9. Bake for 10-12 minutes until edges are lightly golden while centers remain slightly soft.
  10. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For more intense pistachio flavor, toast the nuts before chopping and adding to the dough.
  • The cookies will be soft when first removed from the oven but will firm up as they cool.
  • Store in an airtight container with a slice of bread to maintain softness.
