Grilled Chicken Bites with Buffalo Sauce

Juicy, flavorful chicken thigh bites grilled to perfection and tossed in a homemade buffalo sauce.

  • 2 pounds boneless, skinless chicken thighs
  • 1 Tablespoon avocado oil or your preferred cooking oil
  • 1 Tablespoon Hey Grill Hey Beef Rub or equal parts salt and pepper
  • 1 cup Frank’s RedHot Sauce or your preferred hot sauce
  • ¼ cup butter
  • 2 teaspoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat grill to 425 degrees F for high heat cooking.
  2. Cut chicken thighs into 1½-inch cubes, then drizzle with avocado oil and season with Beef Rub on all sides.
  3. Combine all buffalo sauce ingredients in a skillet and warm until butter melts. Whisk to incorporate, then remove from heat.
  4. Place chicken bites directly on grill grates and close the lid. Cook for 4-5 minutes per side, until internal temperature reaches 175 degrees F.
  5. Transfer grilled chicken bites to the pan of warm sauce and toss to coat thoroughly.
  6. Serve immediately with your favorite dipping sauces.
