For the Chicken Marinade

  • 2 lb boneless, skinless chicken breasts or thighs
  • 1 Tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • Juice of 1 lime

For the Creamy Garlic Sauce

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 garlic cloves, minced
  • 1 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper

For the Bowl Assembly

  • 1 lb broccoli florets
  • 2 cups cooked white rice, brown rice, or quinoa
  • Olive oil, salt, pepper for roasting
  • Lime wedges for serving
  • Optional: fresh parsley or chopped green onions for garnish

Instructions

  1. Whisk together olive oil, paprika, garlic powder, salt, black pepper, cayenne (if using), and lime juice for the marinade. Add chicken, coat thoroughly, and refrigerate for at least 30 minutes or overnight.
  2. Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side until internal temperature reaches 165°F. Rest for 5 minutes before slicing.
  3. Toss broccoli with olive oil, salt, and pepper. Roast at 425°F for 12-15 minutes until edges are golden, or steam until bright green and tender.
  4. Mix mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and pepper to make the creamy garlic sauce.
  5. Assemble bowls with a base of grains, add broccoli and sliced chicken, then drizzle with garlic sauce. Garnish with fresh herbs and serve with lime wedges.
