For the Chicken Marinade:

  • 1.5 pounds boneless, skinless chicken thighs
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Serving:

  • 8 to 12 small corn tortillas (street taco size)
  • 1/2 cup white onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Lime wedges
  • Optional Toppings:
  • Crumbled cheese
  • Avocado slices
  • Green salsa
  • Pickled red onions

Instructions

  1. Mix lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper in a large bowl. Add chicken thighs and coat thoroughly. Cover and refrigerate for at least 30 minutes, preferably 4-8 hours.
  2. Preheat grill or skillet to medium-high heat. Remove chicken from marinade and cook for 5-7 minutes per side until internal temperature reaches 165°F.
  3. Let chicken rest for 5 minutes, then slice into bite-sized pieces.
  4. Warm corn tortillas in a dry skillet for 20-30 seconds per side until soft and slightly toasted.
  5. Assemble tacos by adding chicken to each tortilla and topping with onion and cilantro. Serve with lime wedges and optional toppings.

Notes

For maximum flavor, marinate the chicken for at least 4 hours. Chicken thighs stay juicier than breasts but either can work. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
