Grilled Flank Steak with Corn Tomato Salsa

Dry Rub:

  • 2 tbsp light brown sugar
  • 1 tbsp ancho chili powder
  • 1 tbsp paprika
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin

Steak and Salsa:

  • 2 tbsp olive oil
  • 3 ears corn, husked
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 pint cherry tomatoes, halved
  • 1 cup fresh cilantro, chopped
  • 1/3 cup fresh lime juice
  • Kosher salt and black pepper, to taste
  • 1 1/2 lb flank steak

Instructions

  1. Mix all dry rub ingredients in a small bowl until well combined.
  2. Preheat grill to medium-high (450°F) and lightly oil the grates.
  3. Grill corn until lightly charred on all sides, about 8-10 minutes. Remove and cut kernels off cobs.
  4. Combine corn kernels with tomatoes, onion, jalapeño, cilantro, and lime juice in a bowl.
  5. Season salsa with salt and pepper to taste and refrigerate.
  6. Brush steak with olive oil and coat evenly with dry rub on both sides.
  7. Grill steak 4-5 minutes on first side, then 3-4 minutes on second side for medium-rare (130°F).
  8. Rest steak for 10 minutes tented with foil, then briefly return to grill for 30 seconds per side.
  9. Slice thinly against the grain at a slight angle.
  10. Serve with corn tomato salsa on top.

Notes
