Grilled Lemon Herb Chicken

Juicy chicken thighs marinated in lemon, garlic and fresh herbs, then grilled to perfection for an easy, flavorful meal.

 

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 Tbsp olive oil
  • Juice of 2 lemons
  • 2 tsp lemon zest
  • 4 cloves garlic, minced
  • 2 Tbsp fresh thyme and fresh rosemary
  • Salt and black pepper, to taste

Instructions

  1. Combine olive oil, lemon juice, lemon zest, minced garlic, fresh herbs, salt and pepper in a bowl to create the marinade.
  2. Reserve 2 tablespoons of marinade for basting later.
  3. Place chicken in a shallow dish or resealable bag and pour the remaining marinade over it.
  4. Refrigerate and marinate for 30 minutes to 2 hours (no longer, as lemon juice will break down the chicken).
  5. Preheat grill to medium heat (375°F) and lightly oil the grates.
  6. Remove chicken from marinade, letting excess drip off, and discard used marinade.
  7. Grill chicken for 5-6 minutes per side or until internal temperature reaches 165°F.
  8. Baste occasionally with reserved marinade while grilling.
  9. Remove from grill, tent with foil, and rest for 5 minutes before serving.
