Grilled Sticky Honey Lime Shrimp

Ingredients

  • 1 lb large shrimp (2125 count), peeled and deveined
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • 1 tbsp chopped cilantro, for garnish
  • 2 green onions, thinly sliced, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat (375-400°F).
  2. In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, olive oil, salt, pepper, and red pepper flakes if using.
  3. Pat shrimp dry with paper towels, then add to the marinade and toss to coat evenly. Let sit for 10 minutes.
  4. If using wooden skewers, soak in water for 10 minutes to prevent burning.
  5. Thread marinated shrimp onto skewers, leaving small spaces between each piece.
  6. Transfer remaining marinade to a small saucepan and simmer for 2 minutes to reduce slightly and use as basting sauce.
  7. Place skewers on preheated grill and cook for 2-3 minutes on the first side.
  8. Flip skewers and baste the cooked side with some of the reduced sauce. Cook for another 2-3 minutes until shrimp are fully opaque with light char marks.
  9. Remove from heat and immediately drizzle with the remaining glaze.
  10. Garnish with chopped cilantro, sliced green onions, and serve with lime wedges.

Notes

  • Choose uniformly sized shrimp for even cooking.
  • Don’t marinate the shrimp for longer than 15 minutes as the acid in the lime juice will begin to “cook” them.
  • Shrimp are done when they form a “C” shape; if they curl into an “O” shape, they’re overcooked.
