A warming North African-inspired soup combining earthy lentils with spicy harissa paste, creamy coconut milk, and tangy feta cheese.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 small sweet potato, diced
  • 2 celery stalks, finely chopped
  • 68 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/21 teaspoon salt, to taste
  • 1/2 cup fresh parsley, chopped
  • 5 ounces feta, crumbled
  • 4 cups vegetable broth
  • 1 cup dried brown lentils
  • 1/4 cup harissa
  • 1/21 cup full-fat coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion and celery for 5 minutes until softened.
  2. Add garlic, thyme, paprika, cumin, pepper, and salt. Cook for 5 minutes to develop flavors.
  3. Stir in sweet potato, lentils, broth, parsley, harissa, and feta. Bring to a boil, then reduce heat and simmer.
  4. Cook for 15-20 minutes until lentils and sweet potatoes are tender.
  5. Add coconut milk and simmer for 2-3 minutes more.
  6. Optional: Blend a portion of the soup for a thicker consistency.
  7. Serve hot with additional parsley and feta as garnish.
