Hawaiian Macaroni Salad

Authentic, creamy Hawaiian macaroni salad perfect for plate lunches and backyard luaus.

  • 1 pound macaroni
  • 2 tablespoons apple cider vinegar
  • 2 carrots, shredded
  • ¼ cup shredded onion (optional)
  • 2 ½ cups Best Foods or Hellman’s mayonnaise (no substitutes!)
  • ¼ cup milk
  • 2 teaspoon sugar
  • kosher salt, to taste
  • ground black pepper, to taste

Instructions

  1. Cook macaroni according to package directions plus 2-3 minutes until very soft. Rinse under cold water until completely cool. Drain well.
  2. Transfer macaroni to large bowl and sprinkle with vinegar. Add carrot and onion, toss well, and refrigerate for 15 minutes.
  3. In separate bowl, whisk together mayonnaise, milk, and sugar until smooth.
  4. Fold mayonnaise mixture into macaroni until evenly coated. Season with salt and pepper.
  5. Cover and refrigerate at least 4 hours, preferably overnight.
  6. Before serving, stir gently and add 1-2 tablespoons milk if needed to restore creaminess.

Notes

For authentic flavor, do not substitute the recommended mayonnaise brand.
