Teriyaki Chicken Bowl

Quick, healthy, and flavorful teriyaki chicken bowl with homemade sauce and fresh vegetables – perfect for weeknight dinners or meal prep!

 

Ingredients

  • 1 pound chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh grated ginger
  • ¼ cup chopped green onion (just the white part)

Sauce

  • ¼ cup low sodium soy sauce or tamari
  • ¼ cup low sodium chicken broth
  • 1 tablespoon rice vinegar
  • 3 tablespoons honey
  • 1 tablespoon cornstarch
  • 3 tablespoons water

Veggies

  • 1 red bell pepper chopped
  • 2 cups chopped broccoli florets

Instructions

  1. Pound chicken to ½-inch thickness and cut into 1-inch cubes. Season with salt and pepper.
  2. Heat sesame oil in a non-stick skillet over medium heat. Add garlic, ginger, and white parts of green onions, cooking until fragrant.
  3. Add seasoned chicken and cook for 2-3 minutes per side until golden brown. Transfer to a plate.
  4. In the same pan, sauté bell pepper and broccoli for about 5 minutes until tender-crisp.
  5. Mix cornstarch and water in a small bowl until smooth.
  6. Combine soy sauce, chicken broth, rice vinegar, and honey in a separate bowl, then add the cornstarch mixture.
  7. Return chicken to the pan with vegetables and pour in the sauce.
  8. Simmer everything together until sauce thickens, about 2-3 minutes.
  9. Verify chicken is fully cooked by cutting into a piece.
  10. Serve over rice and garnish with remaining green onions and optional red pepper flakes.
