Chicken & Marinade:

  • 3 pounds chicken pieces (thighs, drumsticks, wings)

  • 2 cups buttermilk

  • 2 tablespoons hot sauce (Frank’s RedHot or similar)

  • 3 eggs, beaten

Breading Mix:

  • 3 cups all-purpose flour

  • 2 tablespoons cayenne pepper

  • 1 tablespoon paprika

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 2 teaspoons black pepper

  • 2 teaspoons kosher salt

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • ½ teaspoon celery salt

  • ½ teaspoon white pepper

  • ¼ teaspoon ground cumin

  • (Optional) 2–3 tablespoons cornmeal for extra crunch

For Frying & Serving:

  • Vegetable or peanut oil (for frying)

  • Honey (optional, for drizzling)

  • Pickle slices (optional, for serving)

Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, combine chicken, buttermilk, and hot sauce.

  2. Cover and refrigerate for at least 1 hour, preferably overnight.

Step 2: Prepare the Breading Mix

  1. In another large bowl, mix flour, cayenne, paprika, garlic powder, onion powder, black pepper, salt, oregano, thyme, celery salt, white pepper, and cumin.

  2. Stir in cornmeal for extra crunch (optional).

Step 3: Bread the Chicken

  1. Remove chicken from marinade, shaking off excess liquid.

  2. Dredge each piece in the flour mixture until well coated.

  3. Place coated chicken on a wire rack for 15 minutes to let the crust set.

Step 4: Fry the Chicken

  1. Heat 2 inches of oil in a deep skillet or fryer to 350°F (175°C).

  2. Fry chicken in batches for 8–10 minutes per side, until golden brown and internal temperature reaches 165°F (74°C).

  3. Drain on a wire rack.

Step 5: Add Crack Seasoning

  1. While still hot, sprinkle chicken generously with the crack seasoning blend.

  2. Serve immediately with pickles or drizzle with honey for a sweet-spicy kick.

Notes

  • Double Fry Method: For extra crispiness, fry once, let rest 5 minutes, then fry again for 2–3 minutes.

  • Season While Hot: Always toss the chicken in seasoning as soon as it comes out of the oil.

  • Oil Matters: Use peanut or vegetable oil for clean, crispy frying.

  • Balance Heat: Drizzle honey to balance the spice or serve with creamy coleslaw.
