Chicken Caesar Salad

A classic chicken Caesar salad with crisp romaine, tender chicken, crunchy homemade croutons, and a rich, creamy dressing made from scratch.

  • 6 ounces uncut sourdough or ciabatta bread
  • 1 (2-ounce) tin oil-packed anchovy fillets (not drained)
  • 1/4 cup plus 2 1/2 tablespoons olive oil, divided
  • 1 1/4 teaspoons kosher salt, divided
  • 1 1/2 pounds boneless, skinless chicken breasts (about 3)
  • 1 teaspoon freshly ground black pepper, divided
  • 2 medium lemons
  • 1 ounce Parmesan cheese (1/2 cup finely grated or 1/3 cup store-bought grated), plus more for serving
  • 2 teaspoons Dijon mustard
  • 1 clove garlic
  • 2 medium heads romaine lettuce (about 12 ounces each)

Instructions

  1. Preheat oven to 400°F. Cut bread into 1/2-inch pieces. Toss with anchovy oil, 1 tablespoon olive oil, and 1/2 teaspoon salt. Bake 10-15 minutes until golden, tossing every 5 minutes.
  2. Pound chicken to 1/2-inch thickness. Season with 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook in 1 tablespoon hot oil, 5-7 minutes per side until internal temperature reaches 165°F. Slice when cool.
  3. In a blender, combine 1/4 cup lemon juice, 5 anchovy fillets, Parmesan, mustard, garlic, and remaining pepper. Blend 20 seconds. Slowly add remaining 1/4 cup oil while blending until creamy.
  4. Chop romaine and place in large bowl. Add half the croutons and 2/3 of the dressing. Toss well. Top with chicken, remaining croutons, dressing, and additional Parmesan.

Notes
