Homemade French Dressing

Ingredients

  • 1/2 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper
  • Optional: 1/4 tsp paprika
  • Optional: 1/2 tsp onion powder
  • Optional: 1 tbsp finely minced shallot

Instructions

  1. In a medium mixing bowl, combine red wine vinegar, ketchup, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk thoroughly until well blended.
  2. While whisking continuously, slowly drizzle in the olive oil in a thin, steady stream until the mixture emulsifies and becomes slightly thicker.
  3. Check the consistency – it should coat the back of a spoon smoothly.
  4. Taste and adjust seasoning with additional salt, pepper, vinegar, or honey as needed.
  5. Transfer to an airtight container or jar and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Shake or whisk well before using as natural separation may occur during storage.

Notes

  • For a creamier version, add 1-2 tablespoons of mayonnaise or Greek yogurt.
  • This dressing can be used as a marinade for chicken by adding an extra tablespoon of oil.
  • For best results, use room temperature ingredients to help with emulsification.
