Honey BBQ Chicken Rice Skillet

A delicious one-pan meal combining tender chicken, fluffy rice and vegetables in a sweet and tangy honey BBQ sauce.

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1/2 cup barbecue sauce (smoky style preferred)
  • 1/4 cup honey
  • 1 cup mixed vegetables (such as peas, carrots, corn, and bell peppers; fresh or frozen)
  • 2 tablespoons vegetable oil or olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • 23 green onions, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • Additional drizzle of barbecue sauce

Instructions

  1. Mix the garlic powder, onion powder, smoked paprika, salt, and pepper in a small bowl.
  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Season chicken with half the spice mix and sear for 3-4 minutes per side until browned but not fully cooked. Remove and set aside.
  3. Add remaining oil to the skillet. Add rice and remaining seasoning, cooking for 1-2 minutes until slightly translucent.
  4. Pour in broth, barbecue sauce, and honey, scraping browned bits from the bottom. Bring to a gentle boil, then reduce heat to low.
  5. Return chicken to the skillet, nestling pieces into the rice. Cover and simmer for 15 minutes without lifting the lid.
  6. Add vegetables over the top, cover again and cook for 5 more minutes until rice is tender and chicken reaches 165°F.
  7. Remove from heat and let rest covered for 5 minutes. Fluff gently with a fork.
  8. Garnish with green onions, parsley, and additional barbecue sauce if desired.
