Honey Lime Chicken Sandwich

Sweet and tangy honey lime marinade transforms ordinary chicken into a mouthwatering sandwich.

  • 2 chicken breasts, sliced thin (about 1 pound)
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced (optional)
  • 1/2 teaspoon ground cumin (optional)
  • 1/4 teaspoon cayenne pepper, or to taste (optional)
  • Salt and pepper to taste
  • 4 sandwich buns
  • Fresh lettuce leaves
  • 1/4 medium red onion, thinly sliced
  • 1 medium avocado, sliced (optional)
  • 1 medium tomato, sliced (optional)
  • 2 tablespoons mayonnaise or Greek yogurt (optional)

Instructions

  1. Slice chicken breasts into thin, even strips about 1/4-inch thick.
  2. In a medium bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, cayenne pepper, salt, and pepper until well combined.
  3. Add chicken to the marinade, tossing to coat evenly. Cover and refrigerate for at least 15 minutes, up to 4 hours.
  4. Prepare vegetables by washing lettuce and slicing onions, tomatoes, and avocado if using.
  5. Heat a large non-stick skillet over medium heat. Add marinated chicken pieces in a single layer, cooking in batches if needed.
  6. Cook chicken for 3-4 minutes on the first side until golden brown, then flip and cook another 2-3 minutes until internal temperature reaches 165°F.
  7. Remove chicken to a clean plate and in the same skillet, toast bun halves cut-side down for 30-60 seconds until lightly golden.
  8. To assemble, spread mayo or yogurt on buns if desired. Place lettuce on bottom bun, top with cooked chicken, red onion, tomato, and avocado.
  9. Complete with top bun and serve immediately.

Notes

For extra flavor, reserve a small portion of the marinade (before adding raw chicken) to drizzle over the cooked chicken.

To make ahead, prepare the marinade and chicken up to 24 hours in advance and store in the refrigerator.

For a spicier sandwich, add sliced jalapeños or increase the cayenne pepper.
