Ingredients

  • 12 ounces broccoli slaw mix or coleslaw mix
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar or preferred sweetener
  • Salt, to taste
  • Black pepper, to taste
  • 16 frozen chicken strips
  • 1 cup honey mustard sauce
  • 8 medium flour or low-carb tortillas
  • 1 ripe avocado, sliced
  • 1/2 small red onion, thinly sliced

Instructions

  1. Mix slaw ingredients in a bowl (broccoli slaw, mayonnaise, vinegar, sugar, salt, pepper) and refrigerate.
  2. Cook chicken strips according to package directions until crispy and fully heated.
  3. Warm tortillas in a dry skillet or microwave with damp paper towels.
  4. Toss hot chicken with 3/4 cup honey mustard sauce, reserving remainder.
  5. Assemble tacos with chicken, slaw, avocado, red onion, and a drizzle of remaining sauce.
  6. Serve immediately while chicken is warm and tortillas are soft.
