Honey Sesame Salmon with Rice Noodles

Ingredients

  • pounds salmon fillets
  • 2 tablespoons sesame oil
  • 3 tablespoons honey
  • 4 tablespoons soy sauce
  • 4 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • ¼ teaspoon ground ginger
  • 8 ounces thin rice noodles
  • 2 cups broccoli florets
  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

  1. Whisk together sesame oil, honey, soy sauce, rice vinegar, garlic, and ginger in a bowl.
  2. Marinate salmon in 2/3 of the mixture for 1 hour in the refrigerator.
  3. Preheat oven to 350°F and bake salmon with marinade for 15 minutes.
  4. Switch to broil. Remove salmon skin if desired and broil 4-6 minutes until caramelized.
  5. Simmer reserved marinade 2-4 minutes until thickened.
  6. Cook rice noodles according to package directions.
  7. Toss broccoli and asparagus with olive oil, salt, and pepper. Roast at 400°F for 12-15 minutes.
  8. Serve salmon over noodles with vegetables and drizzle with sauce. Garnish with sesame seeds and green onions.
