Creamy brie cheese and caramelized onions baked in a sourdough bread bowl and topped with spicy-sweet hot honey.

  • 1 round sourdough loaf or rustic bread boule
  • 12 ounces brie cheese, rind removed and cut into cubes
  • 2 medium yellow onions, thinly sliced
  • 1 tablespoon olive oil, plus more for drizzling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • 1/4 cup honey
  • 1 teaspoon crushed red pepper flakes or chili paste

Instructions

  1. Caramelize onions in olive oil with salt and pepper over medium-low heat for 20-30 minutes until golden. Add garlic and thyme in the final minute.
  2. Preheat oven to 450°F and line a baking sheet with parchment paper.
  3. Cut the top off the bread and hollow out the center, leaving thick sides. Tear removed bread into pieces.
  4. Place bread pieces on the baking sheet, drizzle with olive oil and sprinkle with salt.
  5. Fill the bread bowl with cubed brie and top with caramelized onions.
  6. Bake bread bowl and pieces for 15 minutes until cheese is completely melted.
  7. While baking, warm honey with red pepper flakes over low heat.
  8. Drizzle hot honey over the melted cheese, garnish with fresh thyme, and serve immediately.
