  • 4 teaspoon vegetable oil, avocado oil or olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Pat chicken breasts completely dry with paper towels, then coat all surfaces with oil.
  3. Season both sides thoroughly with salt and pepper.
  4. Place chicken skin-side up on the prepared baking sheet.
  5. Bake for 35-45 minutes until internal temperature reaches 165°F.
  6. Remove from oven, tent loosely with foil and rest for 5-10 minutes.
