Instant Pot Shredded Chicken

Juicy, tender shredded chicken made in the Instant Pot in just 15 minutes – perfect for meal prep and countless easy meals throughout the week.

 

Ingredients

  • 2 to 3 pounds boneless skinless chicken breasts
  • 1 cup chicken stock (or water)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Add chicken breasts, seasonings and chicken stock to your Instant Pot and arrange in an even layer.
  2. Seal the lid and set valve to “sealing” position.
  3. Pressure cook on high for 10 minutes, followed by a 5-minute natural release.
  4. Carefully release remaining pressure by turning valve to “venting.”
  5. Remove lid and shred chicken using two forks.
  6. Toss shredded chicken with cooking liquid before serving or storing.

Notes
