  • 46 oz Genoa salami, thinly sliced
  • 46 slices provolone cheese
  • 23 large romaine lettuce leaves, washed and dried
  • 1 medium tomato, thinly sliced

  • 1 teaspoon Italian herb blend
  • ¼ cup red onion, thinly sliced
  • ¼ cup roasted red peppers, sliced
  • ¼ cup pepperoncini, sliced
  • 1 tablespoon balsamic glaze
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Freshly ground black pepper, to taste
  • Pinch of salt

Instructions

  1. Slice the focaccia bread horizontally to create top and bottom halves. Drizzle both cut sides with olive oil.
  2. Spread mayonnaise and Dijon mustard on the bottom half of the bread.
  3. Arrange salami slices in an even, slightly overlapping pattern across the bread.
  4. Place provolone cheese slices over the meat layer.
  5. Add romaine lettuce, tomato slices, red onions, and roasted red peppers.
  6. Distribute pepperoncini slices evenly across the vegetables.
  7. Sprinkle the Italian herb blend over the fillings and add a light drizzle of balsamic glaze.
  8. Season with freshly ground black pepper and a pinch of salt.
  9. Close the sandwich with the top half of focaccia, pressing down gently.
  10. Let rest for 2-3 minutes, then cut into portions with a sharp serrated knife.
  11. Serve immediately with additional pepperoncini on the side if desired.
