Authentic Italian Pear Cake

  • 2 tablespoons powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Prepare the pears by peeling, coring, and slicing them into thin, even pieces about ¼-inch thick.
  3. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract and optional almond extract and lemon zest.
  6. Gradually fold the dry ingredients into the wet mixture just until combined, being careful not to overmix.
  7. Gently fold about two-thirds of the sliced pears into the batter.
  8. Transfer the batter to your prepared cake pan and spread evenly.
  9. Arrange the remaining pear slices decoratively on top, pressing slightly into the batter.
  10. If using, sprinkle the sliced almonds and turbinado sugar over the top.
  11. Bake for 35-40 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  12. Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  13. Dust with powdered sugar before serving if desired.
