Italian Wedding Soup with Mushrooms

Meatballs:

  • 1 large egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 3/4 lb ground beef
  • 3/4 lb turkey sausage, casings removed
  • 2 tablespoons tomato paste
  • 4 garlic cloves, minced
  • 3 tablespoons chopped fresh parsley
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Soup:

  • 1 tablespoon olive oil
  • 4 ounces turkey bacon, diced
  • 1 yellow onion, diced
  • 2 large carrots, diced
  • 3 celery ribs, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 cups chicken broth
  • 1 cup acini de pepe pasta
  • 5 ounces baby kale
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • Extra grated Parmesan, for serving
  • Salt and pepper, to taste

Instructions

  1. Combine breadcrumbs, egg, and Parmesan in a bowl and let stand for 10 minutes. Add remaining meatball ingredients and gently mix until just combined.
  2. Form into small meatballs (about 1 tablespoon each) and place on a lined baking sheet.
  3. Broil meatballs for 6-8 minutes until lightly browned. Set aside.
  4. Heat olive oil in a Dutch oven over medium heat. Cook diced turkey bacon until crisp, then set aside.
  5. Add onion, carrots, and celery to the pot and cook for 3-4 minutes until softened.
  6. Add mushrooms and cook for another 3-4 minutes until browned. Stir in herbs and cook 1 minute.
  7. Add chicken broth and bring to a simmer. Return meatballs and bacon to the pot, cover, and simmer for 10 minutes.
  8. Stir in pasta and cook for about 8 minutes until tender.
  9. Add baby kale, lemon zest, and lemon juice. Cook for 1 minute until greens wilt.
  10. Season with salt and pepper and serve topped with grated Parmesan.

Notes

For best results, make the meatballs small and uniform in size. You can substitute spinach or escarole for the kale if preferred. The soup can be frozen for up to 3 months. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
