Crispy baked taquitos filled with spicy jalapeño chicken and cheese – a perfect appetizer or main dish!

  • 3 to 4 boneless, skinless chicken breasts, cooked and diced
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped jalapeños (fresh or pickled)
  • 8 flour tortillas (6-inch)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F and prepare a baking sheet with parchment paper or light greasing.
  2. Mix diced chicken, cream cheese, cheddar cheese, jalapeños, cumin, and garlic powder in a large bowl until well combined.
  3. Place about 2 tablespoons of filling on the lower third of each tortilla, roll tightly, and place seam-side down on the baking sheet.
  4. Brush each taquito with olive oil to promote browning and crispiness.
  5. Bake for 15-20 minutes until golden brown and crispy.
  6. Let cool briefly before serving with your favorite dipping sauces.
