Jalapeño Corn Dip

Ingredients

  • 2 cups corn kernels (fresh, frozen thawed, or canned drained)
  • 1 medium jalapeño, seeded and minced
  • 1 tablespoon fresh lime juice
  • 4 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 3 green onions, thinly sliced
  • 1/2 medium red bell pepper, finely diced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped (for garnish, optional)

Instructions

  1. In a medium bowl, combine corn kernels, minced jalapeño, and lime juice. Let sit for 5-10 minutes to marinate.
  2. In a separate large bowl, beat softened cream cheese until smooth. Gradually add mayonnaise and sour cream, stirring until completely combined.
  3. Add minced garlic, cumin, smoked paprika, salt, and pepper to the cream cheese mixture and stir well.
  4. Gently fold the corn mixture into the creamy base until evenly coated.
  5. Fold in shredded cheddar cheese, diced red bell pepper, and sliced green onions, reserving some green onions for garnish if desired.
  6. Transfer to a serving dish, cover, and refrigerate for at least 30 minutes (2 hours is ideal) to allow flavors to meld.
  7. Before serving, give the dip a final stir and garnish with reserved green onions and fresh cilantro if using.

Notes

  • For extra heat, leave some jalapeño seeds in the dip.
  • Use freshly shredded cheese rather than pre-packaged for the best melting and texture.
  • This dip can be made up to 24 hours in advance and improves as it chills.
