Jerk Chicken Salad with Mango

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 2 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 4 cups mixed salad greens
  • 1 medium ripe mango, diced
  • ¼ red onion, thinly sliced
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 medium avocado, sliced (optional)
  • ¼ cup fresh cilantro, chopped (optional)
  • ½ cup pineapple chunks (optional)
  • ¼ cup roasted cashews or sliced almonds (optional)

Instructions

  1. Pat chicken breasts dry with paper towels.
  2. Rub chicken thoroughly with jerk seasoning and 1 tablespoon olive oil, coating all sides evenly.
  3. Heat a grill pan or skillet over medium-high heat.
  4. Cook chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Transfer chicken to a cutting board and let rest for 5 minutes.
  6. In a large bowl, combine mixed greens, diced mango, and red onion slices.
  7. Slice the rested chicken against the grain into thin strips.
  8. Add chicken to the salad bowl.
  9. Drizzle with remaining olive oil and lime juice.
  10. Season with salt and pepper to taste.
  11. Gently toss all ingredients until well combined.
  12. Top with optional ingredients if using, and serve immediately.

Notes

  • For a creamier dressing, mix 3 tablespoons olive oil, 2 tablespoons lime juice, 1 tablespoon honey, and 1 teaspoon Dijon mustard.
  • Control the heat by adjusting the amount of jerk seasoning.
