The ultimate method for a perfectly moist turkey with golden, crispy skin using the secret ingredient: mayonnaise.

  • 1 1/2 cup mayonnaise
  • 1 tablespoon paprika
  • 4 teaspoons dried parsley
  • 2 teaspoons garlic powder
  • 2 teaspoon dried thyme
  • 2 teaspoon ground sage
  • 1 teaspoon hot sauce or a pinch of cayenne
  • Kosher salt and freshly ground black pepper
  • One 10– to 12-pound turkey
  • 1 medium onion, quartered
  • 1 head garlic, halved across the garlic cloves
  • Several sprigs fresh herbs, such as thyme, parsley, rosemary and sage
  • 2 bay leaves

Instructions

  1. Position rack in lowest position and preheat oven to 325°F. Set roasting rack in large roasting pan.
  2. Combine mayonnaise, paprika, dried parsley, garlic powder, thyme, sage, hot sauce, 2 tablespoons salt and 2 teaspoons pepper in medium bowl.
  3. Remove giblets from turkey cavities and pat bird completely dry with paper towels.
  4. Rub mayo mixture all over turkey including cavity, creating smooth even coverage especially on breast.
  5. Stuff cavity with onion, garlic, herb sprigs and bay leaves.
  6. Place turkey breast-side up on roasting rack and tent with foil.
  7. Roast for 2 hours, then remove foil and increase temperature to 425°F.
  8. Add 1 cup water to roasting pan and continue roasting until internal temperature reaches 165°F in thigh (about 30-45 minutes more).
  9. Let turkey rest 20 minutes before carving.
