A quick and fruity dessert made with mixed berries, yellow cake mix, and melted butter. Perfect with whipped cream or ice cream!
2 pounds mixed berries (fresh or frozen)
⅔ cup sugar
¼ cup cornstarch
2 tablespoons lemon juice
1 box yellow cake mix
½ cup butter, melted
Preheat the oven to 350℉.
Add the berries to the bottom of a 9×13-inch baking dish.
Sprinkle sugar, cornstarch, and lemon juice over the berries. Gently stir to coat.
In a bowl, mix together the dry cake mix and melted butter until crumbly.
Distribute the cake mix topping evenly over the berry mixture.
Bake for 45–50 minutes, until bubbly around the edges and golden on top. If browning too quickly, tent with foil.
Let it cool for 15 minutes before serving. Enjoy warm with ice cream or whipped topping if desired.
I typically use a frozen berry mix with blueberries, raspberries, and blackberries, but strawberries work too. No need to thaw them first.
