In a large bowl, combine ground beef, gochujang, soy sauce, sesame oil, garlic powder, green onions, ginger, brown sugar, sesame seeds, and black pepper.
Gently mix the ingredients until just combined, being careful not to overwork the meat.
Divide the mixture into four equal portions and form into patties about ¾-inch thick. Press your thumb into the center of each patty to create a dimple.
Place formed patties on a plate, cover loosely with plastic wrap, and refrigerate for at least 15 minutes.
Preheat grill or heavy skillet to medium-high heat.
Cook patties for 4-5 minutes on the first side until well-browned.
Flip carefully and cook for another 3-4 minutes for medium doneness (155°F internal temperature).
During the last minute of cooking, toast the burger buns cut-side down on the grill or in a separate pan.
Let patties rest for 2-3 minutes before assembling.
Spread sriracha mayo on bottom buns, then layer with lettuce, burger patty, kimchi, cucumber slices, pickled daikon (if using), and red onion.
Top with the other half of the bun and serve immediately.
Notes
For a milder version, reduce the gochujang to 1 teaspoon and increase the brown sugar to 2 teaspoons.
Feel free to customize your toppings based on preference – avocado slices make a great addition.
