A creamy, comforting one-pan meal combining tender leeks, white beans, and savory toppings for a simple yet impressive dish.

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 large leeks, sliced into rounds
  • 2 garlic cloves, crushed
  • 1 jar white beans, including their liquid
  • ½ cup vegetable broth
  • Juice of ½ lemon + extra wedges for serving
  • ¼ cup chopped fresh parsley
  • 46 slices turkey bacon or beef bacon, cooked until crispy and crumbled
  • 2 handfuls walnut halves (about ¼ cup), toasted and chopped
  • 3 ounces blue cheese (gorgonzola, stilton, or similar), roughly sliced

Instructions

  1. Cook bacon until crisp, then set aside to cool before crumbling.
  2. In a large skillet, melt butter with olive oil over medium heat. Add onion and cook for 5-6 minutes until softened.
  3. Add leeks and garlic, cooking another 5 minutes until tender.
  4. Pour in vegetable broth and bring to a gentle simmer. Add beans with their liquid and cook for 2 minutes.
  5. Meanwhile, toast walnuts in a dry skillet until golden, then chop.
  6. Stir in most of the parsley and lemon juice. Season to taste.
  7. Serve topped with blue cheese slices, toasted walnuts, bacon, and remaining parsley.
  8. Add extra lemon wedges on the side.

Notes

For a vegetarian version, simply omit the bacon. You can substitute blue cheese with feta, goat cheese, or any favorite cheese for a different flavor profile. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
