Lemon Yogurt Turkey Meatballs

  • 1/2 cup plain Greek yogurt (full-fat recommended)
  • Zest of 1 medium lemon
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tablespoons fresh parsley, finely chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh dill, chopped (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine yogurt, lemon zest, lemon juice, minced garlic, beaten egg, salt, and pepper; mix well.
  3. Add the ground turkey, breadcrumbs, chopped parsley, and any optional herbs or seasonings; gently mix until just combined.
  4. With slightly damp hands, form mixture into 1-inch meatballs (about 1½ tablespoons each).
  5. Arrange meatballs on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake for 18-20 minutes, or until meatballs reach an internal temperature of 165°F (74°C) and are lightly golden.
  7. Allow meatballs to rest for 2-3 minutes before serving.
  8. Serve hot with your favorite sauce, over pasta, or with a fresh Mediterranean salad.

Notes

  • For extra flavor, try adding 1/4 cup crumbled feta cheese to the mixture.
  • Meatballs can be made ahead and frozen for up to 3 months in an airtight container.
