  • 2 medium red onions, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 1 cup dried green or French lentils, rinsed
  • 6 cups vegetable broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon fresh thyme leaves
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat oil in large pot over medium-low heat. Add sliced onions, cover and cook for about 30 minutes, stirring occasionally, until very soft and deeply golden.
  2. Add minced garlic, cook for 1 minute until fragrant.
  3. Add lentils, vegetable broth, thyme, salt, and black pepper. Bring to gentle simmer and cook uncovered for 30–40 minutes until lentils are tender.
  4. Stir in shredded chicken and simmer for 5–10 minutes until warmed through.
  5. Taste, adjust seasoning, and serve hot.
