Creamy, cheesy mashed potatoes loaded with bacon, cheddar, and chives for the ultimate comfort food experience.

  • 3 pounds russet potatoes (about 3 large potatoes or 6 medium), peeled and chopped into 1-inch pieces
  • 6 slices bacon, preferably center-cut
  • 1/2 cup whole milk
  • 6 tablespoons (3/4 stick) unsalted butter
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 ounces sharp cheddar cheese, shredded (about 2 cups)
  • 1 large bunch fresh chives, finely chopped until you have 1/4 cup
  • 1 cup sour cream (8 ounces)

Instructions

  1. Place peeled and chopped potatoes in a large pot and cover with water by 2 inches. Bring to a boil over high heat, then reduce to a simmer and cook until fork-tender, 7-10 minutes.
  2. While potatoes cook, fry bacon in a skillet over medium heat until crisp, about 8 minutes, flipping halfway. Drain on paper towels, then crumble.
  3. In a saucepan, combine milk, butter, salt, and pepper. Warm over medium heat until butter melts, 2-5 minutes.
  4. Drain cooked potatoes in a colander. Return to pot and mash until mostly smooth.
  5. Add warm milk mixture, bacon, cheese, sour cream, and most of the chives (reserve 1 tablespoon). Stir to combine.
  6. Transfer to serving bowl, garnish with reserved chives, and serve hot.
