  • 1/2 lb uncooked elbow macaroni (225 g)
  • 3 tablespoons butter (43 g)
  • 2 Tablespoons all-purpose flour (16 g)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups milk, any kind (360 ml)
  • 3/4 cup half and half (180 ml)
  • 2 1/2 cups shredded cheddar cheese (250 g)

Instructions

  1. Preheat oven to 325°F and lightly grease an 8-inch square baking dish.
  2. Boil the macaroni until it’s al dente, following the directions on the package. Drain and set aside.
  3. Melt butter in medium saucepan over medium heat. Stir in the flour, salt, and pepper, whisking until a smooth roux forms. Cook for 2 minutes, stirring constantly.
  4. Gradually add milk and half and half, whisking continuously. Simmer over medium-low heat for 5–7 minutes, or until the mixture thickens to a gravy-like texture.
  5. Remove from heat and stir in 1 cup shredded cheese until melted.
  6. Combine sauce with cooked macaroni. Pour half into prepared baking dish, sprinkle with 1/2 cup cheese, add remaining pasta, and top with remaining cheese.
  7. Bake for 15–20 minutes, or until the cheese is fully melted and bubbling.
