Maple Mustard Apple Chicken Burgers

  • 1 lb ground chicken (preferably with some dark meat)
  • 1/2 cup finely diced apples (Honeycrisp or Gala recommended)
  • 2 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 burger buns
  • 4 lettuce leaves
  • 12 cloves minced garlic (optional)
  • 1 tsp fresh thyme, chopped (optional)
  • 2 tbsp grated onion (optional)
  • 1/4 cup panko breadcrumbs (optional, helps bind moister patties)
  • 1/4 cup extra maple-mustard sauce for topping (2 tbsp maple syrup + 2 tbsp Dijon)
  • 1/4 cup thinly sliced red onion
  • 4 slices Swiss or white cheddar cheese (optional)
  • 1 cup arugula (optional)
  • 1 avocado, sliced (optional)

Instructions

  1. In a large mixing bowl, combine ground chicken, diced apples, maple syrup, Dijon mustard, smoked paprika, salt, and pepper. Mix gently until just combined.
  2. If using optional flavor enhancers (garlic, thyme, onion, breadcrumbs), fold them in now.
  3. Cover and refrigerate the mixture for 15-20 minutes to help flavors meld.
  4. Divide the mixture into four equal portions and gently form into patties about 1/2-inch thick. Press a small indentation in the center of each patty.
  5. Preheat your grill or skillet over medium-high heat. If using a skillet, add 1 tablespoon of olive oil.
  6. Cook the patties for 5-6 minutes on the first side until golden-brown caramelization forms around the edges.
  7. Flip carefully and cook another 5-6 minutes on the second side until the internal temperature reaches 165°F.
  8. If adding cheese, place a slice on each patty during the final 1-2 minutes and cover to melt.
  9. Meanwhile, lightly toast the burger buns until golden and slightly crisp.
  10. For extra sauce, mix 2 tablespoons maple syrup with 2 tablespoons Dijon mustard.
  11. Assemble burgers with lettuce on the bottom bun, followed by the patty and any additional toppings.
  12. Serve immediately while hot.

Notes

  • For juicier burgers, choose ground chicken that includes some dark meat.
  • The apple pieces should be diced very small (about 1/4-inch) so they cook through but still provide bursts of moisture.
  • Allow the patties to rest for 2-3 minutes after cooking for maximum juiciness.
  • For meal prep, store cooked patties separately from toppings and buns.
