Maple Streusel Pumpkin Cake

  • ½ cup pure maple syrup

  • For the streusel topping:
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon
  • ¼ cup cold butter, cubed
  • ¼ cup chopped pecans or walnuts (optional)
  • For the maple glaze:
  • 1 cup powdered sugar
  • 23 tbsp pure maple syrup
  • 12 tbsp heavy cream or milk
  • ¼ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a large bowl, whisk pumpkin purée, maple syrup, melted butter, brown sugar, eggs, and vanilla until smooth.
  4. Gently fold dry ingredients into wet mixture until just combined, being careful not to overmix.
  5. Make streusel topping: Combine flour, sugars, and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Stir in nuts if using.
  6. Pour batter into prepared pan and spread evenly. Sprinkle streusel topping over batter.
  7. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  8. Let cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. Prepare maple glaze: Whisk together powdered sugar, maple syrup, cream, vanilla, and salt until smooth.
  10. Drizzle glaze over cooled cake and allow to set before serving.

Notes

  • For the best flavor, use pure maple syrup, not pancake syrup or maple-flavored products.
  • The cake can be made 1-2 days ahead and stored at room temperature.
  • Freeze unglazed cake for up to 3 months; thaw overnight and add fresh glaze before serving.
