  • ¾ cup whole wheat pastry flour or white/regular whole wheat flour
  • ½ cup white whole wheat flour or regular whole wheat flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon fine sea salt
  • ½ teaspoon lemon zest (from about ½ medium lemon)
  • 1 cup mashed ripe banana (from about 3 bananas)
  • ½ cup virgin coconut oil, melted
  • ¼ cup honey
  • 1 large egg, preferably at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened shredded coconut, divided
  • 1 tablespoon turbinado (raw) sugar
  • 12 tablespoons matcha powder

Instructions

  1. Preheat oven to 375°F. Grease or line a 12-cup muffin tin.
  2. Combine flours, matcha powder, baking powder, salt, and lemon zest in a bowl. Stir in ½ cup shredded coconut.
  3. In another bowl, whisk together mashed bananas, melted coconut oil, honey, egg, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined.
  5. Divide batter among muffin cups, filling about ¾ full.
  6. Mix remaining coconut with turbinado sugar and sprinkle over muffins.
  7. Bake for 17-20 minutes until a toothpick inserted comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
