For the Meatballs

  • 1 pound extra-lean ground beef
  • 1 small onion, finely chopped or grated
  • 2 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup grated Parmesan cheese

For the Soup

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 3 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 1 can (29 ounces) diced tomatoes
  • 1 can (29 ounces) cannellini beans, drained and rinsed
  • 1 to cups uncooked short pasta (such as ditalini, macaroni, or small shells)
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 1 tablespoon Italian seasoning
  • ⅓ cup grated Parmesan cheese, for serving

Instructions

  1. Mix ground beef, onion, garlic, Italian seasoning, egg, salt, pepper, and Parmesan in a bowl. Form into 1-inch meatballs and chill.
  2. Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes. Add garlic and cook 30 seconds more.
  3. Pour in broth, water, tomatoes, beans, salt, pepper, and Italian seasoning. Bring to a boil.
  4. Add meatballs to the soup. Reduce heat, cover, and simmer for 20 minutes until meatballs are cooked.
  5. Stir in pasta and cook 8-12 minutes until tender. Adjust seasoning if needed.
  6. Serve with grated Parmesan cheese on top.

Notes
