Mediterranean lemon basil chicken Serving

Tender chicken marinated in yogurt, lemon, and fresh basil for a bright, flavorful Mediterranean dish.

 

Ingredients

  • 1 cup plain full-fat yogurt
  • 2 teaspoons black pepper
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 4 cloves garlic, crushed
  • 1 tablespoon lemon juice
  • Zest of 2 lemons
  • ½ cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken breast, cut into 1-inch cubes
  • Cooked rice or crusty bread, for serving

Instructions

  1. Blend yogurt, black pepper, salt, honey, garlic, lemon juice, lemon zest, and basil in a food processor until smooth.
  2. Add olive oil and pulse again to combine completely.
  3. Place chicken cubes in a large bowl, pour marinade over, and toss to coat evenly. Refrigerate for 24 hours.
  4. Preheat grill to medium-high. Thread chicken onto metal skewers with space between pieces.
  5. Oil grill grates well and cook skewers 4-5 minutes per side until chicken reaches 165°F internal temperature.
  6. Alternatively, cook in a cast-iron skillet over medium-high heat with a little oil for 4-5 minutes per side.
  7. For broiling, place skewers on a wire rack over a baking sheet and broil until browned, rotating as needed.
  8. Serve with rice or bread and garnish with fresh herbs if desired.
